Irish Corned Beef Recipe (slow-cooker)

MVIMG_20180314_190949.jpgIts March and you know what that means… St. Patrick’s Day! So get some green beer and eat delicious corned beef! I received this recipe from my mom who said “this is your grandmother’s recipe,” so I figured since I’ve been eating it every St. Patrick’s day my whole life I should try and make it myself. Surely I couldn’t be selfish, so now I’m sharing it with the world! I hope you enjoy your corned beef as much as I do.


  • Slow-cooker
  • 1- 2 lb Corned beef (I got mine from Costco, because well I’m obsessed with shopping there)
  • 3 cups of  potatoes cut into 1/4s (I use small red ones, but any potato will do)
  • 2 cups of mini carrots
  • 1 head of yellow cabbage (cut into wedges)
  • 1 onion chopped
  • 1 8 oz can of beer (I use Guinness)
  • 1/2 cup of sprite or ginger ale
  • 3 cups of beef broth (I use reduced sodium)
  • buns (I like the small slider buns)


Layer the bottom of your slow-cooker with some of the veggies. Place your corned beef on top and put the rest of the veggies around the beef. Sprinkle the corned beef seasoning packet on top then pour your liquids over everything. The beef should be covered by the liquid (this will make it tender). Place slow cooker on desired time for the results you want – 4 hours if you want tender slices – 6 hours if you want it to fall apart like butter. While traditionally you can eat this as a dish, but I cook mine for 6 and then make little sliders with the meat and have the veggies as my side.

5 Day Workout Routine

Do you ever go to the gym with no plan and then kind of do a few things, walk around a lot and then leave not knowing if what you just did even counted as working out? I know I have, so I decided to take a break from the gym for a few weeks and when I went back I knew I was going to be regimented, disciplined and excited for my planned workouts so that I would leave feeling great every time. Now I know there are people who workout everyday, but I like days off which is why I came up with a plan that is flexible and works. They are designed to keep you active for about an hour each day. I super-set them, meaning I do a set of one then a set of another then go back for 3 sets of each then move on with no rest in between sets. Here is my workout routine that I think you’ll love! 7 days in Kauai, Hawaii

IMG_20180117_103934.jpgI just got back from Kauai, Hawaii. So here is a list of great things to do and see when you go. Plus I have included an itinerary!

Beaches on each side of the island:

  • North – Tunnels Beach aka Makua Beach (amazing beach for snorkeling), Ke’e beach and caves
  • South – Shipwreck Beach, Poipu Beach Park and the Salt Ponds beach
  • East – Lydgate park beach (very family friendly),  Kalapaki Beach
  • West – Kekaha Beach, Polihale State Park (best one in Kauai)

Life as a Substitute Teacher

Where I live full-time teaching jobs are hard to come by. I graduated last year with my masters degree in education, and low and behold there were and still are no secondary history/government teaching jobs available within an hour in any direction  from my house. So I have tuned to substitute teaching making very little per hour with no benefits all to gain experience and keep my face fresh in the admins’ mind so when a job does open here (in a few years) I will be able to apply and hopefully get it. I was super excited and eager to get started and have been subbing for about a year now. The routine is pretty much the same unless I get lucky enough to get a class of students I already know. Luckily I am not in the journey alone either, I have several friend who also sub as they couldn’t find full-time positions here either. I know what you’re thinking… why don’t you just move, great questions. Well for one, have you ever been to Western Montana?! it’s unbelievable beautiful and Missoula, Montana has a sense of community unlike I have ever seen; simply put, I love it here, I am just minutes away from about 20 or more beautiful hikes and want to raise a family here. Secondly, my husband has a solid job here so we can’t just pick up and leave. so here is a break down of the sub life for ya!

Yeah… I actually live in a place where people globally travel to see.

The best slow cooker beef roast ever!

If you’re anything like me, you are a busy person! Juggling life can be challenging enough, and now you’re telling me I need to cook a good, nutrition, hearty, hot meal after a long day at work when all I want to do it veg out on the couch and watch whatever comedy catches my eye on Netflix?! Well, I decided crockpot/slow cooker meals were going to be my thing come winter. So here I am, it’s dark when I wake up and go to the gym and it’s dark when I get home from work, so crockpot season has begun! Below you will find a recipe for slow cooker Beef Roast that I have pieced together from other recipes I have tried in the past (mostly from all recipes thats my go to), and I have found that this mix creates perfection as far as roasts go. A morning routine that won’t fail you.

I haven’t always been one, but establishing a good routine helped me become one and I haven’t looked back since! We are habit forming creatures so why not set yourself up for the most success you can have by sticking to a routine? According to an article from Northwestern Medicine people who set a routine are less likely to be stressed, you are more likely to sleep better (and thus feel more refreshed when you walk up), and you’ll be more healthy over all. The Ultimate Oahu, Hawaii Vacation

Going to (Oahu) Honolulu, Hawaii?! Well here are the best things to do while you’re there and where to stay!

As far as hotels go, we stayed in Waikiki the whole time and just took day trips from there. We stayed at two places, first we stayed at Courtyard by Marriott Waikiki Beach, it was okay, but not very clean and the location wasn’t that great. Then we stayed at Vive Hotel Waikiki, which I would highly recommend. They offered free breakfast, beach towels, chairs, and boogie boards. It was very clean, the staff was great and the rooms were modern and wonderful. While it’s not right on the beach, it’s only two blocks away and way more affordable than beach front hotels. Getting around we used the public busses except for one day when we went to the Northside of the island.

Rent a car (way better than the bus as long as you leave after 9am so you miss rush hour) and drive up to the Northside of the island to catch a wave, take surf lessons, or just leave it to the pros and watch others surf in the incredibly large, breath-taking waves.
